Deb’s Masters Egg Salad With Green Eggs
Ingredients:
- 12 hard-boiled eggs, peeled
- 1 tablespoon Dijon mustard
- 1/2 cup mayonnaise (can sub sour cream, but not as good)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 3 tablespoons capers, or to taste (can sub diced jalapeños for a spicy version)
- 1 tablespoon green food coloring
- 1/2 cup distilled white vinegar
Instructions:
Cut the hard-boiled eggs in half lengthwise and remove the yolks to a bowl. In a separate bowl, mix 1/2 cup white vinegar, 1 tablespoon green food coloring, and 2 tablespoons water. Place the egg whites in the green mixture and soak for 15 minutes, or until they turn green. Remove the egg whites, pat dry with a paper towel, and chop into generous pieces.
Combine the yolks with all remaining ingredients in a bowl and mix thoroughly. Add the green egg whites and mix lightly. Refrigerate for an hour, then serve on Hawaiian rolls or bread.
